Frappato rewards this sort of attention. It is the pale, perfumed one among Sicily’s reds: light in colour, low in tannin, and much more about scent and lift than weight. Served slightly cool it behaves less like a heavy southern red than most people expect from the island.
Tasting a single grape across an evening is the fastest way to hear what it actually sounds like — and to work out how much of what you taste comes from the variety and how much from the place and the person who grew it.
