How we use the personal data you share with us, and the rights you have over it.

What we collect, and why
Newsletter. When you sign up to our letters we keep your email address and the date you signed up, to send you our monthly letter. The legal basis is your consent (GDPR art. 6.1.a). Every letter has a link to unsubscribe, and you can also ask us by email.
Bookings. When you book a tasting online, the booking is handled by Bókun, which collects your name, email and the details of your booking so that we can confirm it; card payments are processed by Stripe. The legal basis is the booking you ask us for (art. 6.1.b).
Messages. If you write to us on WhatsApp, by phone or by email, we use what you send only to answer you and to arrange your order, booking or delivery (art. 6.1.b).
Website statistics. Without your consent we only count page visits anonymously, with no cookies. If you accept cookies, we also use Google Analytics and one small first-party cookie (dv_vid) that counts returning visitors (art. 6.1.a). You can change your choice at any time from “Cookie settings” at the bottom of every page.
Is it required? Giving us your data is optional, but without your email we cannot send you the newsletter, and without your name and email we cannot confirm a booking.
Cookies
We only set analytics cookies if you click “Accept”. These are all the cookies our website can use:

Bókun, which shows our booking calendar, may also store technical data in your browser that the booking needs to work, only while you use it. Google Maps and Instagram are simple links on our website, not embedded, so they set no cookies here; they apply their own rules once you open them. Our website also remembers a few choices in your browser, not as cookies: your cookie choice, your language, that you confirmed you are 18 or over (for the visit only) and whether you closed the events pop-up.
Who handles the data for us
We use trusted providers to run the website and send our letters: Supabase (website database), Brevo (newsletter emails), Bókun (online bookings), Stripe (booking payments), Google (Analytics, only with your consent), GitHub Pages (website hosting) and WhatsApp. They process the data only on our behalf. Some of them may store data outside the European Union, with the safeguards required by the GDPR.
How long we keep it
Newsletter addresses: until you unsubscribe. Bookings and messages: as long as needed for your booking or order and for our legal and tax obligations. Website statistics: up to 14 months.
Your rights
You can ask to see, correct or delete your data, to limit or object to its use, to receive a copy, and to withdraw your consent at any time, by writing to divino.urbancellar@gmail.com. You also have the right to complain to the Italian data protection authority, the Garante per la protezione dei dati personali (garanteprivacy.it).
Age
Our website is for people aged 18 or over. We do not knowingly collect data from anyone younger.
